Partially destemmed, naturally fermented with around twenty days on skins, then aged at least six months on the lees in French oak, 20 to 30% new. Pure and expressive, showing savoury red fruit over gentle, ripe tannins, with mouthwatering acidity. Made for roast chicken, charcuterie or a mushroom tart.
